Homemade Chicken Croquettes from Grandma
Ingredients
2 cups cooked chicken, shredded
1 cup bread crumbs
1/2 cup grated Parmesan cheese
1/4 cup finely chopped parsley
1/2 cup finely chopped onion
2 cloves garlic, minced
2 large eggs
1/4 cup all-purpose flour
Salt and pepper, to taste
Vegetable oil, for frying
Instructions
In a large bowl, combine the shredded chicken, bread crumbs, Parmesan cheese, parsley, onion, and garlic.
In a separate bowl, beat the eggs and add them to the chicken mixture. Mix until well combined.
Season the mixture with salt and pepper.
Shape the mixture into small, round balls or oval croquettes.
Roll each croquette in flour, then dip in beaten egg, and coat with additional bread crumbs.
Heat vegetable oil in a large skillet over medium heat.
Fry the croquettes in batches, turning them occasionally, until they are golden brown and crispy on all sides.
Remove the croquettes from the skillet and drain on paper towels.
Serve the homemade chicken croquettes warm and enjoy!
