Homemade Breakfast Sausage

Ingredients:
1 lb ground pork (or ground turkey for a leaner option)
1/2 tsp salt
1/2 tsp black pepper
1 tsp dried sage (or 1 tbsp fresh sage, finely chopped)
1/2 tsp thyme (optional, for extra flavor)
1/4 tsp crushed red pepper flakes (optional, for a little heat)
1/2 tsp garlic powder
1/4 tsp onion powder
1/4 tsp paprika
1 tbsp maple syrup (optional, for a touch of sweetness)
1/4 tsp ground nutmeg (optional, for a warming flavor)
1 tbsp olive oil (or butter) for frying

Instructions:
Prepare the Sausage Mix:
In a large mixing bowl, combine the ground pork with all the seasonings: salt, pepper, sage, thyme, red pepper flakes, garlic powder, onion powder, paprika, and nutmeg.
If you want a slightly sweet flavor, add the maple syrup to the mix.
Using your hands, gently mix everything together until well combined. Be careful not to overwork the meat, as it can become tough.
Shape the Sausage Patties:
Divide the sausage mixture into 8-10 portions (depending on the size of the patties you prefer).
Use your hands to shape each portion into a round patty, about 1/2 inch thick.
Cook the Sausage:
Heat the olive oil (or butter) in a large skillet over medium heat.
Add the sausage patties to the skillet, being careful not to overcrowd the pan.
Cook the patties for about 4-5 minutes per side, or until golden brown and cooked through, with an internal temperature of 160°F (71°C).
Serve:
Remove the patties from the skillet and place them on a paper towel-lined plate to drain any excess grease.
Serve immediately with eggs, toast, or as part of a hearty breakfast.
