Hobo Casserole Recipe
Ingredients:
1 lb ground beef
1 small onion (chopped)
4-5 medium russet potatoes (thinly sliced)
1 can (10.5 oz) cream of mushroom soup
½ cup milk
1 cup shredded cheddar cheese
Salt and pepper (to taste)
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon paprika (optional, for extra flavor)
2 tablespoons butter (optional, for extra richness)
Chopped parsley (for garnish, optional)
Instructions:
Preheat the oven:
Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with non-stick spray or butter.
Cook the ground beef:
In a large skillet, brown the ground beef over medium-high heat until fully cooked. Add the chopped onion and cook for an additional 2-3 minutes until softened. Drain any excess fat. Season the beef with salt, pepper, garlic powder, onion powder, and paprika. Set aside.
Prepare the potatoes:
Thinly slice the potatoes (about ⅛ inch thick) using a knife or mandoline. Try to make the slices even so they cook uniformly.
Make the sauce:
In a medium bowl, combine the cream of mushroom soup and milk, stirring until smooth.
Assemble the casserole:
Layer half of the sliced potatoes evenly in the prepared baking dish. Sprinkle with a little salt and pepper. Spread the cooked ground beef mixture over the potatoes.
Pour half of the soup mixture over the beef layer. Add another layer of sliced potatoes on top, then pour the remaining soup mixture over the potatoes.
Bake:
Cover the baking dish with foil and bake in the preheated oven for 45-50 minutes, or until the potatoes are tender.
Add cheese:
Remove the foil, sprinkle the shredded cheddar cheese over the top, and return the dish to the oven for an additional 10-15 minutes, or until the cheese is melted and bubbly.
Garnish and serve:
Let the casserole rest for a few minutes before serving. Garnish with chopped parsley if desired.
