Hearty Green Beans and Potatoes
Ingredients:
1 lb (450 g) fresh green beans, trimmed and cut into 1-inch pieces
1 lb (450 g) baby potatoes, halved
1 large onion, chopped
2 cloves garlic, minced
1 cup chicken broth
1/2 cup heavy cream
2 tablespoons olive oil
1 tablespoon butter
1 teaspoon dried thyme
1 teaspoon dried rosemary
Salt and pepper to taste
1 tablespoon chopped fresh parsley (for garnish)
Directions:
Cook the Potatoes:
Heat olive oil in a large skillet over medium heat.
Add halved baby potatoes and cook for about 5 minutes, stirring occasionally, until they start to brown.
Prepare the Green Beans:
Add chopped onion and garlic to the skillet with potatoes. Cook until softened, about 5 minutes.
Stir in the green beans and cook for another 3-4 minutes.
Make the Sauce:
Pour in chicken broth and bring to a simmer. Reduce heat and cover. Cook for 15-20 minutes, or until potatoes are tender and green beans are cooked to your liking.
Stir in heavy cream, butter, thyme, rosemary, salt, and pepper. Cook for an additional 5 minutes, allowing the sauce to thicken slightly.
Serve:
Garnish with chopped parsley and serve hot.
