Hearty and Flavorful Stuffed Cabbage Soup

Ingredients:
– 1 lb ground beef
– 1 large onion, chopped
– 2 cloves garlic, minced
– 4 cups beef broth
– 1 can (15 oz) tomato sauce
– 1 can (14.5 oz) diced tomatoes, undrained
– 1/2 head green cabbage, chopped
– 2 carrots, sliced
– 1/2 cup uncooked long grain white rice
– 1 bay leaf
– 1 teaspoon paprika
– 1 teaspoon dried thyme
– Salt and pepper to taste
– Fresh parsley, chopped (for garnish)

Directions:
1. In a large pot, cook the ground beef over medium heat until browned. Drain any excess fat.
2. Add the chopped onion and minced garlic to the pot, and sauté until the onion is translucent.
3. Stir in the beef broth, tomato sauce, and diced tomatoes.
4. Add the chopped cabbage, sliced carrots, uncooked rice, bay leaf, paprika, thyme, salt, and pepper. Stir to combine.
5. Bring the mixture to a boil, then reduce the heat and let it simmer for about 25-30 minutes, or until the rice and vegetables are tender.
6. Remove the bay leaf before serving.
7. Garnish with fresh parsley and enjoy.
