Hearty and Cheesy Sausage Soup

Ingredients:
– 1 pound Italian sausage
– 1 small onion, chopped
– 2 cloves garlic, minced
– 4 cups chicken broth
– 1 can (14.5 ounces) diced tomatoes, undrained
– 1 can (15 ounces) cannellini beans, drained and rinsed
– 2 cups baby spinach, chopped
– 1 cup heavy cream
– 2 cups shredded cheddar cheese
– Salt and pepper to taste

Directions:
1. In a large pot, cook the Italian sausage over medium heat until browned and crumbled. Drain any excess fat.
2. Add the chopped onion and minced garlic to the pot and cook until the onion is translucent, about 5 minutes.
3. Pour in the chicken broth and diced tomatoes with their juices. Bring to a boil.
4. Stir in the cannellini beans and chopped spinach. Reduce the heat and simmer for 10 minutes.
5. Add the heavy cream and shredded cheddar cheese to the pot, stirring until the cheese is melted and the soup is creamy.
6. Season with salt and pepper to taste.
7. Serve hot, garnished with additional shredded cheese if desired.
