Ingredients
Nuts, Seeds & Fruit
-
1 cup almonds, roughly chopped
-
½ cup pumpkin seeds
-
½ cup sunflower seeds
-
¼ cup sesame seeds
-
¼ cup flaxseeds or chia seeds
-
½ cup dried cranberries
(or raisins, chopped dates, or dried apricots)
Natural Sweeteners & Flavor
-
½ cup honey
(or maple syrup for a vegan version) -
1 tablespoon coconut oil (optional, for shine & binding)
-
½ teaspoon cinnamon (optional)
-
Pinch of sea salt
Step-by-Step Instructions
1. Prepare the Nut & Seed Base
In a large mixing bowl, combine the chopped almonds, pumpkin seeds, sunflower seeds, sesame seeds, flaxseeds (or chia), and dried fruit. Stir well to ensure even distribution — this helps every cookie hold together and taste balanced.
2. Warm the Natural Sweetener
In a small saucepan over low heat, gently warm the honey (and coconut oil, if using) for 2–3 minutes, just until it becomes slightly thinner and glossy. Do not boil — overheating can reduce nutrients and make the cookies hard.
Remove from heat and stir in the cinnamon and sea salt.
3. Combine & Mix
Pour the warm honey mixture over the nut-and-seed mixture. Using a sturdy spoon or spatula, mix thoroughly until everything is fully coated and sticky.
4. Shape the Cookies
Line a tray or baking sheet with parchment paper.
Scoop spoonfuls of the mixture and press firmly into cookie shapes using your hands or a cookie mold. Compress tightly — this is key to cookies that hold together.
