Healthy Cookies – No Sugar! No Flour!
Ingredients:
2 ripe bananas, mashed
1 1/2 cups rolled oats
1/2 cup almond butter (or any nut butter)
1/4 cup unsweetened applesauce
1/4 cup unsweetened shredded coconut
1/2 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/4 cup dark chocolate chips (optional)
Directions:
Prepare the Oven:
Preheat your oven to 350°F (175°C).
Line a baking sheet with parchment paper.
Mix the Wet Ingredients:
In a large bowl, combine the mashed bananas, almond butter, unsweetened applesauce, and vanilla extract.
Stir until smooth and well combined.
Add the Dry Ingredients:
Add the rolled oats, unsweetened shredded coconut, and ground cinnamon to the wet mixture.
Stir until all ingredients are well incorporated.
If using, fold in the dark chocolate chips.
Shape the Cookies:
Drop spoonfuls of the dough onto the prepared baking sheet, flattening them slightly with the back of the spoon.
Ensure the cookies are evenly spaced.
Bake:
Place the baking sheet in the preheated oven.
Bake for 12-15 minutes, or until the cookies are set and lightly golden on the edges.
Cool and Enjoy:
Remove the cookies from the oven and let them cool on the baking sheet for a few minutes.
Transfer to a wire rack to cool completely.
