Healthy Cookies
Ingredients:
1 cup almond flour
1/2 cup oats (use gluten-free if needed)
1/4 cup coconut flour
1/4 cup coconut oil (melted) or unsweetened applesauce
1/2 cup honey or maple syrup
1 teaspoon vanilla extract
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup dark chocolate chips or chopped nuts (optional)
Directions:
Preheat Oven:
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
Mix Dry Ingredients:
In a medium bowl, combine the almond flour, oats, coconut flour, baking soda, and salt. Mix well.
Mix Wet Ingredients:
In a separate bowl, whisk together the melted coconut oil (or applesauce), honey (or maple syrup), and vanilla extract until smooth.
Combine Ingredients:
Gradually add the wet ingredients to the dry ingredients, mixing until well combined. The dough should be slightly sticky but hold together well.
Add Mix-ins:
Gently fold in the dark chocolate chips or chopped nuts if using.
Form Cookies:
Scoop tablespoon-sized balls of dough onto the prepared baking sheet, spacing them about 2 inches apart. Flatten each cookie slightly with the back of the spoon or your fingers.
Bake:
Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown.
Cool:
Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
