Ingredients
For the Cake

1 cup crushed pineapple, drained

Directions
1. Preheat Oven
Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan or line it with parchment paper.
2. Mix Dry Ingredients
In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
3. Cream Butter and Sugar
In a large mixing bowl, beat the butter and granulated sugar until light and fluffy, about 2–3 minutes.
4. Add Eggs and Vanilla
Add eggs one at a time, beating well after each addition. Mix in vanilla extract until combined.
5. Incorporate Dry Ingredients and Pineapple
Gradually add the dry ingredients to the butter mixture, mixing until just combined. Fold in the drained crushed pineapple gently.
6. Bake the Cake
Pour the batter into the prepared pan and spread evenly. Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean. Allow the cake to cool completely before frosting.
7. Frost and Serve
For the optional frosting, beat butter and cream cheese until creamy. Gradually add powdered sugar and vanilla, mixing until smooth. Spread over the cooled cake and sprinkle with toasted coconut if desired. Slice and serve.
