Hawaiian Pineapple Cake
Ingredients:
For the Cake:
2 cups all-purpose flour
2 cups granulated sugar
2 teaspoons baking soda
1/2 teaspoon salt
2 large eggs
1 teaspoon vanilla extract
1 (20 oz) can crushed pineapple with juice
1/2 cup unsweetened shredded coconut (optional)
For the Frosting:
1 (8 oz) package cream cheese, softened
1/2 cup unsalted butter, softened
2 cups powdered sugar
1 teaspoon vanilla extract
1/2 cup chopped pecans or walnuts (optional)
1/4 cup sweetened shredded coconut for topping (optional)
Directions:
Preheat Oven:
Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking dish.
Make the Cake Batter:
In a large mixing bowl, whisk together the flour, granulated sugar, baking soda, and salt until well combined.
Add the eggs, vanilla extract, and the entire can of crushed pineapple (including the juice) to the dry ingredients. Stir until just combined. If using, fold in the unsweetened shredded coconut.
Bake the Cake:
Pour the batter into the prepared baking dish, spreading it evenly.
Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
Once baked, remove the cake from the oven and allow it to cool completely in the baking dish.
Prepare the Frosting:
In a medium mixing bowl, beat the softened cream cheese and butter together until smooth and creamy.
Gradually add the powdered sugar, beating on low speed until combined. Then, increase the speed to medium-high and beat until light and fluffy.
Stir in the vanilla extract. If using, fold in the chopped pecans or walnuts.
Frost the Cake:
Once the cake is completely cooled, spread the cream cheese frosting evenly over the top.
For an extra touch, sprinkle the sweetened shredded coconut over the frosting.
Serve:
Cut the cake into squares and serve. This cake is delicious on its own or paired with a scoop of vanilla ice cream.
