Ingredients:
2 cups all-purpose flour
2 cups granulated sugar
2 tsp baking soda
1/2 tsp salt
2 large eggs
1 tsp vanilla extract
1 can (20 oz) crushed pineapple, undrained
1 cup chopped walnuts or pecans (optional)
1/2 cup shredded coconut (optional)
Cream Cheese Frosting:
1 package (8 oz) cream cheese, softened
1/2 cup unsalted butter, softened
4 cups powdered sugar
1 tsp vanilla extract
1/2 cup crushed pineapple, well-drained (optional)

Directions:
Preheat the Oven:
Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
Mix Dry Ingredients:
In a large bowl, whisk together the flour, sugar, baking soda, and salt.
Combine Wet Ingredients:
Add the eggs, vanilla extract, and the entire can of crushed pineapple (with juice) to the dry ingredients. Mix until well combined.
Add Nuts and Coconut (Optional):
Fold in the chopped nuts and shredded coconut if desired.
Bake the Cake:
Pour the batter into the prepared baking pan and spread it evenly.
Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
Prepare the Cream Cheese Frosting:
In a medium bowl, beat the softened cream cheese and butter until smooth and creamy.
Gradually add the powdered sugar, one cup at a time, mixing well after each addition.
Stir in the vanilla extract and the well-drained crushed pineapple, if using.
Frost the Cake:
Allow the cake to cool completely in the pan before spreading the cream cheese frosting evenly over the top.
Serve and Enjoy:
Slice the cake into squares and serve. Refrigerate any leftovers.
