Green Chile Chicken Rice-A-Roni Casserole

Ingredients:
1 box Chicken Rice-A-Roni (prepared according to package instructions)
2 cups cooked and shredded chicken (rotisserie works great)
1 cup sour cream
1 (10 oz) can green enchilada sauce
1 (4 oz) can diced green chiles
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
1/2 cup crushed tortilla chips (optional for topping)
1 tsp garlic powder
1 tsp onion powder
Salt and pepper to taste

Directions:
Preheat Oven:
Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
Cook Rice-A-Roni:
Prepare the Chicken Rice-A-Roni according to the package instructions. Set aside.
Mix Ingredients:
In a large mixing bowl, combine the cooked Rice-A-Roni, shredded chicken, sour cream, green enchilada sauce, green chiles, garlic powder, onion powder, and half of each shredded cheese. Mix well and season with salt and pepper to taste.
Assemble Casserole:
Spread the mixture evenly into the prepared baking dish. Sprinkle the remaining cheddar and Monterey Jack cheeses on top.
Optional Topping:
If desired, sprinkle crushed tortilla chips over the cheese layer for added crunch.
Bake:
Bake uncovered in the preheated oven for 25–30 minutes or until the casserole is bubbly and the cheese is melted and golden.
Serve:
Remove from the oven and let it cool for 5 minutes before serving. Garnish with chopped cilantro or sliced jalapeños, if desired.
