Grandma’s Chocolate Pie Recipe
Ingredients:
For the Pie Crust:
1 1/4 cups all-purpose flour
1/2 cup unsalted butter (cold and cubed)
1/4 teaspoon salt
1/4 cup cold water (more if needed)
For the Chocolate Filling:
1 cup granulated sugar
1/3 cup unsweetened cocoa powder
1/4 cup cornstarch
1/4 teaspoon salt
2 3/4 cups whole milk
4 large egg yolks (beaten)
2 tablespoons unsalted butter (cut into small pieces)
1 teaspoon vanilla extract
For Topping:
Whipped cream (for serving)
Chocolate shavings or cocoa powder (for garnish, optional)
Instructions:
Make the pie crust:
In a mixing bowl, combine the flour and salt. Cut in the cold butter until the mixture resembles coarse crumbs.
Gradually add the cold water, mixing until the dough comes together. You may need a bit more water to achieve the right consistency.
Shape the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
Preheat the oven:
Preheat your oven to 425°F (220°C).
Roll out the dough:
On a lightly floured surface, roll out the chilled dough to fit your pie pan. Transfer the rolled dough to the pan and trim any excess.
Blind bake the crust:
Prick the bottom of the crust with a fork to prevent bubbling. Line the crust with parchment paper and fill it with pie weights or dried beans.
Bake for 10-12 minutes, then remove the weights and parchment. Bake for an additional 5-7 minutes, or until lightly golden. Let it cool completely.
Make the chocolate filling:
In a medium saucepan, whisk together the sugar, cocoa powder, cornstarch, and salt. Gradually stir in the milk until smooth.
Cook over medium heat, stirring constantly until the mixture thickens and comes to a boil. Once boiling, continue to cook for 2 minutes.
Remove from heat and slowly whisk in the beaten egg yolks, stirring continuously to prevent curdling. Return the mixture to low heat and cook for an additional 2-3 minutes, or until thickened.
Remove from heat and stir in the butter and vanilla extract until smooth.
Assemble the pie:
Pour the chocolate filling into the cooled pie crust, spreading it evenly. Allow it to cool at room temperature for a bit, then refrigerate for at least 4 hours or until set.
Serve:
Once the pie is set, top it with whipped cream and garnish with chocolate shavings or a sprinkle of cocoa powder if desired. Slice and enjoy!
