Grandma’s Chocolate Pie
Ingredients:
For the Pie Crust:
1 1/2 cups all-purpose flour
1/2 cup (1 stick) unsalted butter, cold and cut into small cubes
1/4 cup granulated sugar
1/4 cup cold water (adjust as needed)
For the Chocolate Filling:
1 cup granulated sugar
1/4 cup unsweetened cocoa powder
1/4 cup cornstarch
1/8 teaspoon salt
2 3/4 cups whole milk
4 large egg yolks
2 tablespoons unsalted butter
1 teaspoon vanilla extract
For the Topping:
Whipped cream (optional)
Chocolate shavings or grated chocolate (optional)
Directions:
Prepare the Pie Crust:
In a medium bowl, mix the flour, sugar, and salt. Add the cold butter cubes and use a pastry cutter or your fingers to work the butter into the flour until the mixture resembles coarse crumbs.
Gradually add the cold water, 1 tablespoon at a time, mixing just until the dough comes together. Avoid overmixing.
Shape the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
Preheat Oven:
Preheat your oven to 375°F (190°C).
Roll Out and Bake the Crust:
On a lightly floured surface, roll out the dough to fit a 9-inch pie dish. Transfer the dough to the dish and trim any excess.
Prick the bottom of the crust with a fork to prevent bubbling. Line with parchment paper and fill with pie weights or dried beans.
Bake for 15 minutes. Remove the parchment and weights, and bake for an additional 5-7 minutes until lightly golden. Let cool completely.
Prepare the Chocolate Filling:
In a medium saucepan, whisk together the sugar, cocoa powder, cornstarch, and salt.
Gradually whisk in the milk, and cook over medium heat, whisking constantly, until the mixture starts to thicken and bubble.
In a separate bowl, whisk the egg yolks. Gradually add a small amount of the hot mixture to the egg yolks to temper them. Then whisk the tempered egg yolks back into the saucepan.
Continue to cook and whisk until the mixture thickens further, about 2-3 minutes.
Remove from heat and stir in the butter and vanilla extract until the butter is melted and the mixture is smooth.
Assemble the Pie:
Pour the chocolate filling into the cooled pie crust and smooth the top with a spatula.
Chill the pie in the refrigerator for at least 4 hours, or until set.
Add Topping and Serve:
Before serving, top with whipped cream and chocolate shavings, if desired.
