Grammies Coconut Pie
Ingredients:
1 unbaked 9-inch pie crust
1 1/2 cups sweetened shredded coconut
1 cup granulated sugar
1/2 cup unsalted butter, melted
3 large eggs
1 teaspoon vanilla extract
1 tablespoon all-purpose flour
1/2 cup buttermilk
1/4 teaspoon salt
Directions:
Preheat the Oven:
Preheat your oven to 350°F (175°C).
Prepare the Filling:
In a large mixing bowl, whisk together the sugar, melted butter, eggs, vanilla extract, flour, buttermilk, and salt until smooth and well combined.
Stir in the shredded coconut, making sure it is evenly distributed throughout the mixture.
Assemble the Pie:
Pour the coconut filling into the unbaked pie crust, spreading it out evenly.
Bake:
Place the pie in the preheated oven and bake for 45-50 minutes, or until the filling is set and the top is golden brown.
If the crust edges start to brown too quickly, cover them with aluminum foil to prevent burning.
Cool and Serve:
Allow the pie to cool completely before slicing. This will help the filling to firm up.
Serve at room temperature or chilled, with a dollop of whipped cream if desired.
