Ingredients:
2 cans (14.75 oz each) pink salmon, drained and flaked
1/2 cup finely chopped onion
1/2 cup finely chopped green bell pepper
1/4 cup mayonnaise
1 large egg, beaten
1/2 cup breadcrumbs
1/4 cup cornmeal
1 teaspoon garlic powder
1/2 teaspoon paprika
1/2 teaspoon black pepper
1/4 teaspoon salt
Vegetable oil, for frying
Fresh lemon wedges, for serving

Directions:
Prepare the Salmon Mixture:
In a large mixing bowl, combine the drained and flaked salmon, chopped onion, green bell pepper, mayonnaise, and beaten egg.
Add the breadcrumbs, cornmeal, garlic powder, paprika, black pepper, and salt to the mixture. Stir until well combined.
Form the Patties:
Shape the salmon mixture into patties, about 2-3 inches in diameter. You should get around 8-10 patties, depending on the size.
Heat the Oil:
In a large skillet, heat about 1/4 inch of vegetable oil over medium heat until hot but not smoking.
Fry the Patties:
Carefully place the salmon patties into the hot oil, frying in batches if necessary to avoid overcrowding the pan.
Cook for 3-4 minutes on each side, or until the patties are golden brown and crispy.
Remove the cooked patties from the skillet and drain on paper towels to remove excess oil.
Serve:
Serve the salmon patties hot with fresh lemon wedges on the side. These patties are perfect with a side of coleslaw, grits, or a simple green salad.
