Garlic Red Potatoes
Ingredients:
1.5 lbs (about 680g) red potatoes, washed and quartered
4 cloves garlic, minced
2 tablespoons olive oil
1 teaspoon dried rosemary (or 1 tablespoon fresh rosemary, chopped)
1/2 teaspoon salt
1/4 teaspoon black pepper
Chopped fresh parsley for garnish (optional)
Instructions:
Preheat your oven to 400°F (200°C).
In a large bowl, toss together quartered red potatoes, minced garlic, olive oil, dried rosemary (if using fresh rosemary, add it later), salt, and black pepper until the potatoes are evenly coated.
Spread the potatoes in a single layer on a baking sheet lined with parchment paper or aluminum foil.
Roast in the preheated oven for about 30-35 minutes, or until the potatoes are tender and lightly browned, stirring once halfway through cooking.
If using fresh rosemary, sprinkle it over the potatoes during the last 5 minutes of baking.
Remove from oven and garnish with chopped parsley if desired.
