🥦 Roasted Broccolini

  • 1 bunch broccolini

  • 1 tablespoon olive oil

  • Salt, pepper & garlic powder, to taste

  • Optional: fresh lemon juice for finishing

👩‍🍳 How to Make It

1️⃣ Sear the Juicy Lamb Chops

  • Season lamb chops with salt, pepper, garlic, and herbs.

  • Heat olive oil in a skillet over medium-high heat.

  • Sear chops 3–4 minutes per side until browned and cooked to desired doneness.

  • Add butter and balsamic vinegar, spooning the glaze over the chops.

  • Remove from heat and let rest.

2️⃣ Cook the Pasta

  • Boil fettuccine in salted water according to package directions.

  • Reserve ¼ cup pasta water, then drain.

3️⃣ Sauté the Shrimp

  • In a skillet, melt butter over medium heat.

  • Add garlic, then shrimp.

  • Cook just until shrimp turn pink (about 2 minutes per side). Remove and set aside.

4️⃣ Make the Alfredo Sauce

  • In the same skillet, add heavy cream and Italian seasoning.

  • Simmer gently, then stir in Parmesan until smooth and creamy.

  • Add pasta and shrimp, tossing to coat.

  • Use reserved pasta water to loosen sauce if needed.

5️⃣ Roast the Broccolini

  • Toss broccolini with olive oil and seasonings.

  • Roast at 425°F (220°C) for 12–15 minutes, until tender with charred tips.

  • Finish with a squeeze of lemon if desired.
