Garlic Chicken with Broccoli and Spinach
Ingredients:
2 chicken breasts, boneless and skinless, sliced into thin strips
2 tablespoons olive oil
4 garlic cloves, minced
1 cup broccoli florets
2 cups fresh spinach leaves
1/2 teaspoon red pepper flakes (optional)
1/4 cup chicken broth
1 tablespoon lemon juice
Salt and pepper to taste
Directions:
Heat olive oil in a large skillet over medium heat. Add the chicken strips and cook for 5-7 minutes, until browned and cooked through. Remove chicken from the skillet and set aside.
In the same skillet, add minced garlic and cook for 1 minute until fragrant. Add the broccoli florets and cook for 3-4 minutes, until they start to soften.
Add the spinach, red pepper flakes (if using), chicken broth, and lemon juice to the skillet. Cook for 2-3 minutes until the spinach wilts and the broccoli is tender.
Return the chicken to the skillet and toss everything together. Season with salt and pepper to taste.
Serve hot, garnished with a sprinkle of additional red pepper flakes or lemon wedges if desired.
