🧾 Ingredients

  • 2 large boneless, skinless chicken breasts

  • 1 cup mushrooms, finely chopped

  • 3 tbsp unsalted butter, divided

  • 3 cloves garlic, minced

  • ½ tsp salt

  • ¼ tsp black pepper

  • ½ tsp Italian seasoning or thyme

  • ½ cup shredded mozzarella or Swiss cheese

  • 1 tbsp olive oil

  • Fresh parsley, chopped (for garnish)

👩‍🍳 How to Make It

1️⃣ Prep the Chicken

  • Slice a deep pocket into each chicken breast (don’t cut all the way through).

  • Season inside and out with salt, pepper, and Italian seasoning. Set aside.

2️⃣ Make the Garlic Mushroom Filling

  • Melt 1½ tbsp butter in a skillet over medium heat.

  • Add mushrooms and cook until softened and moisture evaporates (5–6 minutes).

  • Stir in garlic and cook 30 seconds until fragrant.

  • Remove from heat and mix in shredded cheese.

3️⃣ Stuff the Chicken

  • Spoon mushroom mixture into each chicken pocket.

  • Secure with toothpicks if needed to keep filling inside.

4️⃣ Sear for Flavor

  • Heat olive oil and remaining butter in a skillet over medium-high heat.

  • Sear chicken 3–4 minutes per side until golden brown.

5️⃣ Finish Cooking

  • Reduce heat, cover skillet, and cook another 10–12 minutes until chicken reaches 165°F (74°C) internal temperature.
