Garlic Butter Mushroom Stuffed Chicken

Ingredients:
4 boneless, skinless chicken breasts
2 cups mushrooms, sliced
3 cloves garlic, minced
1 tbsp olive oil
2 tbsp unsalted butter
1 tsp dried thyme
1 tsp dried rosemary
½ tsp paprika
½ tsp salt
½ tsp black pepper
1 cup shredded mozzarella cheese
Fresh parsley, chopped (for garnish)
Toothpicks (for securing)

Directions:
Prepare the Filling:
Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the sliced mushrooms and sauté until golden brown, about 5-6 minutes.
Add the minced garlic and sauté for another minute until fragrant. Remove from heat and let the mixture cool slightly.
Prepare the Chicken:
Butterfly the chicken breasts by slicing them horizontally through the middle, being careful not to cut all the way through. Open them like a book.
Season both sides of the chicken with salt, pepper, paprika, thyme, and rosemary.
Stuff the Chicken:
Fill each chicken breast with the sautéed mushrooms and shredded mozzarella cheese. Fold the chicken over and secure the edges with toothpicks.
Cook the Chicken:
In the same skillet, melt the butter over medium heat. Add the stuffed chicken breasts and cook for 5-6 minutes per side, until golden brown and cooked through (internal temperature should reach 165°F).
Baste the chicken with the garlic butter while it cooks for extra flavor.
Serve and Garnish:
Remove the toothpicks, garnish with fresh parsley, and serve hot with your choice of side dishes such as roasted vegetables, mashed potatoes, or rice.
