Frozen Strawberry Cheesecake
Ingredients:
1 ½ cups graham cracker crumbs
1/4 cup butter, melted
16 oz cream cheese, softened
1 cup powdered sugar
1 teaspoon vanilla extract
2 cups heavy whipping cream
1 ½ cups fresh strawberries, chopped
1/2 cup strawberry preserves
Extra strawberries for garnish
Directions:
In a medium bowl, mix the graham cracker crumbs and melted butter until combined. Press the mixture into the bottom of a 9-inch springform pan. Freeze for 10 minutes.
In a large bowl, beat the cream cheese, powdered sugar, and vanilla extract until smooth.
In a separate bowl, whip the heavy cream until stiff peaks form, then gently fold it into the cream cheese mixture.
Stir in the chopped strawberries and strawberry preserves until well incorporated.
Pour the mixture over the graham cracker crust and smooth the top.
Freeze for at least 4 hours or overnight until firm.
Before serving, garnish with extra fresh strawberries.
