FRIED POTATOES AND ONIONS

Ingredients
4 medium potatoes (Yukon Gold or Russet), peeled and thinly sliced
1 large onion, thinly sliced
3 tbsp vegetable oil or bacon grease
1 tbsp unsalted butter (optional, for added flavor)
1 tsp garlic powder
1 tsp paprika
Salt and black pepper, to taste
Fresh parsley or chives (optional, for garnish)
Instructions
1. Prep the Potatoes:
Rinse the sliced potatoes under cold water to remove excess starch. Pat them dry with a clean towel. This step helps them crisp up while frying.
2. Heat the Pan:
Heat the oil (or bacon grease) in a large skillet over medium heat. Add the butter if using and let it melt.
3. Cook the Potatoes:
Add the potato slices to the skillet in an even layer. Let them cook undisturbed for 5-6 minutes to develop a crispy golden crust.
Flip the potatoes and cook for another 5-6 minutes. Stir occasionally for even cooking.
4. Add the Onions:
Stir in the sliced onions with the potatoes. Sprinkle garlic powder, paprika, salt, and pepper evenly over the mixture.
Continue cooking, stirring occasionally, until the potatoes are tender and the onions are caramelized, about 10-15 minutes.
5. Serve:
Transfer the fried potatoes and onions to a serving dish.
Garnish with fresh parsley or chives if desired. Serve hot as a side dish or as a main with eggs for a hearty breakfast.
