Fried Mashed Potato Balls Recipe
Ingredients:
2 cups mashed potatoes (chilled)
1 cup shredded cheddar cheese
1/4 cup chopped green onions (optional)
Salt and pepper (to taste)
1/2 cup all-purpose flour
2 large eggs (beaten)
1 cup breadcrumbs (Panko or regular)
Oil for frying (vegetable, canola, or peanut oil)
Instructions:
Prepare the mashed potato mixture:
In a large bowl, mix the mashed potatoes, shredded cheddar cheese, and green onions (if using). Season with salt and pepper to taste. Roll the mixture into 1- to 1.5-inch balls.
Set up the dredging station:
Place the flour in one shallow dish, the beaten eggs in another, and the breadcrumbs in a third dish.
Coat the potato balls:
Roll each mashed potato ball in the flour, dip it in the beaten egg, and then coat it in the breadcrumbs. Make sure each ball is fully covered.
Heat the oil:
In a deep skillet or pot, heat about 2 inches of oil over medium-high heat until it reaches 350°F (175°C). If you don’t have a thermometer, you can test the oil by dropping in a small piece of bread; it should sizzle and turn golden brown in about 60 seconds.
Fry the potato balls:
Fry the mashed potato balls in batches, being careful not to overcrowd the pan. Cook each batch for 2-3 minutes, turning occasionally, until they are golden brown and crispy.
Drain and serve:
Remove the fried mashed potato balls with a slotted spoon and place them on a paper towel-lined plate to drain any excess oil. Serve hot with dipping sauces like ranch, sour cream, or ketchup.
