Fried Green Tomatoes
Ingredients:
3 large green tomatoes, sliced 1/4 inch thick
Salt and pepper to taste
1 cup all-purpose flour
2 large eggs, beaten with 1 tablespoon water
½ cup yellow cornmeal
½ cup panko breadcrumbs
¼ teaspoon paprika
A pinch of cayenne pepper (optional)
Oil for frying
Instructions:
1. Slice the green tomatoes into 1/4-inch thick rounds. Season both sides with salt and pepper.
2. Prepare three separate shallow dishes: one with all-purpose flour, one with the beaten eggs mixed with water, and one with a mixture of cornmeal, panko breadcrumbs, paprika, and cayenne pepper.
3. Dredge each tomato slice in the flour, ensuring it’s fully coated. Shake off any excess.
4. Dip the floured tomato slice into the egg mixture, allowing any excess to drip off.
5. Press the tomato slice into the cornmeal and breadcrumb mixture, ensuring an even coating on both sides.
6. In a large skillet, heat about ½ inch of oil over medium heat until shimmering.
7. Carefully place the coated tomato slices into the hot oil, frying in batches to avoid overcrowding. Fry each side for 2-3 minutes or until golden brown.
8. Using a slotted spoon, transfer the fried tomatoes to a paper towel-lined plate to drain excess oil.
9. Serve hot, optionally with a dipping sauce of your choice.
