Ingredients:
2 cups fresh sweet corn kernels (about 3-4 ears of corn)
1/2 cup all-purpose flour
1/4 cup cornmeal
1/4 cup finely chopped green onions
1/4 cup grated Parmesan cheese
1 egg, lightly beaten
1/4 cup milk
1/2 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon black pepper
Vegetable oil for frying

Instructions:
In a large bowl, combine the fresh sweet corn kernels, flour, cornmeal, green onions, Parmesan cheese, egg, milk, baking powder, salt, and black pepper. Mix until well combined.
Heat vegetable oil in a large skillet over medium heat.
Spoon about 2 tablespoons of the batter for each fritter into the hot oil, spreading slightly with the back of the spoon to form a round shape. Cook the fritters in batches to avoid overcrowding the skillet.
Fry the fritters for about 2-3 minutes on each side, or until golden brown and crispy.
Remove the fritters from the skillet and drain on paper towels to remove excess oil.
Serve the sweet corn fritters warm, optionally garnished with a dollop of sour cream or a sprinkle of chopped fresh herbs.
