🍃 Fresh Mint Ice Cream 🍨
Cool down with this refreshing homemade fresh mint ice cream, perfect for hot summer days!
Ingredients:
Fresh Mint Ice Cream:
1 cup whole milk
2 cups mint leaves
3/4 cup sugar
2 cups heavy cream
5 egg yolks
A pinch of salt
Salted Watermelon Granita:
3 cups watermelon, diced
1/3 cup sugar
1 lemon, juiced
1 tsp flaked sea salt
Directions:
Salted Watermelon Granita:
Puree watermelon, sugar, and lemon juice in a food processor until smooth.
Pour into a shallow, freezer-proof dish and freeze.
Scrape with a fork every 30 minutes to move ice crystals to the center, until fully frozen (3-4 hours).
Sprinkle with sea salt before serving.
Fresh Mint Ice Cream:
Heat whole milk, sugar, and 1 cup of heavy cream in a saucepan over medium heat until it bubbles at the edges.
Remove from heat, add mint leaves, cover, and steep for 1-2 hours.
Whisk egg yolks in a bowl until smooth.
Reheat the mint mixture, then slowly add a third to the egg yolks while whisking.
Pour the egg yolk mixture back into the saucepan and cook over low heat, stirring until thickened.
Strain through a fine-mesh sieve, add the remaining heavy cream, and chill thoroughly.
Churn in an ice cream maker according to manufacturer instructions.
Assembly:
Layer scoops of watermelon granita and fresh mint ice cream in serving dishes.
Serve immediately.
