Fresh Mediterranean Salad
Ingredients (serves 4)
2 cucumbers, sliced
4 ripe tomatoes, diced
1 small red onion, finely sliced
100g pitted black (or green) olives
150g cubed feta cheese
3 tbsp extra virgin olive oil
Juice of 1 lemon
Salt and freshly ground pepper
A few fresh basil or oregano leaves (optional)
Preparation
Prepare the vegetables:
Wash the cucumbers and tomatoes. Slice the cucumbers into thin slices and the tomatoes into cubes. Thinly slice the red onion.
Assemble the salad:
In a large salad bowl, combine the cucumbers, tomatoes, olives, red onion, and feta cheese.
Season:
Add olive oil and lemon juice. Season to taste with salt and pepper. Toss gently to coat all ingredients.
Garnish:
If desired, sprinkle the salad with a few fresh basil or oregano leaves for an extra touch of freshness.
Tip:
For a more filling version, you can add cooked chickpeas or quinoa for a little more texture.
