Fresh Apple Bundt Cake
Ingredients:
3 cups all-purpose flour
2 cups granulated sugar
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
1 cup vegetable oil
4 large eggs
1 teaspoon vanilla extract
3 cups peeled and chopped apples (about 2-3 apples)
1 cup chopped pecans or walnuts (optional)
For the Glaze:
1/2 cup butter
1 cup brown sugar
1/4 cup milk
1 teaspoon vanilla extract
Instructions:
Preheat Oven:
Preheat your oven to 350°F (175°C). Grease and flour a Bundt pan.
Mix Dry Ingredients:
In a large bowl, whisk together flour, sugar, baking soda, cinnamon, nutmeg, and salt.
Add Wet Ingredients:
In another bowl, whisk together the eggs, oil, and vanilla extract.
Pour the wet ingredients into the dry ingredients and mix until just combined.
Add Apples and Nuts:
Gently fold in the chopped apples and nuts (if using) until evenly distributed.
Bake:
Pour the batter into the prepared Bundt pan and smooth the top.
Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
Make the Glaze:
In a saucepan, melt the butter over medium heat.
Add the brown sugar and milk, stirring constantly until the mixture comes to a boil. Let it boil for 1-2 minutes, then remove from heat and stir in the vanilla extract.
Cool and Glaze:
Let the cake cool in the pan for about 10 minutes before transferring to a wire rack.
Drizzle the warm glaze over the cooled cake.
