French Onion Broccoli Cheese Casserole

French Onion Broccoli Cheese Casserole

Ingredients:
4 cups fresh broccoli florets (steamed or blanched)
1 can (10.5 oz) cream of mushroom soup (or cream of chicken soup)
1/2 cup sour cream
1/2 cup mayonnaise
1 cup shredded sharp cheddar cheese
1/2 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1 medium onion, thinly sliced
1 tablespoon olive oil
1 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and pepper to taste
1/2 cup crispy fried onions (for topping)

Directions:
Preheat Oven: Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish.
Prepare Broccoli: Steam or blanch the broccoli florets until they are bright green and slightly tender (about 4-5 minutes). Drain any excess water and set aside.
Cook the Onions: In a skillet, heat the olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, until they are golden brown and caramelized (about 10-12 minutes). Remove from heat and set aside.
Make the Casserole Mixture: In a large mixing bowl, combine the cream of mushroom soup, sour cream, mayonnaise, garlic powder, onion powder, and half of the shredded cheddar cheese. Stir until everything is well combined. Season with salt and pepper to taste.
Assemble the Casserole: Add the steamed broccoli to the bowl with the soup mixture and stir to coat the broccoli evenly. Fold in the caramelized onions and half of the mozzarella cheese.
Bake the Casserole: Pour the mixture into the prepared baking dish and spread it out evenly. Sprinkle the remaining cheddar, mozzarella, and Parmesan cheeses on top.
Top with Fried Onions: Sprinkle the crispy fried onions over the top of the casserole.
Bake: Place the casserole in the preheated oven and bake for 25-30 minutes, or until the cheese is melted and bubbly and the top is golden brown.
Serve: Let the casserole cool for a few minutes before serving. Garnish with additional crispy fried onions if desired.
