French Onion Beef and Noodles

Ingredients:
1 pound beef stew meat (or flank steak, cut into bite-sized pieces)
2 large onions, thinly sliced
3 cloves garlic, minced
4 cups beef broth
1 tablespoon Worcestershire sauce
1 teaspoon dried thyme
1 teaspoon salt
1/2 teaspoon black pepper
2 cups egg noodles
1 cup shredded Swiss cheese (or Gruyère for a more authentic flavor)
2 tablespoons olive oil
Fresh parsley, chopped (for garnish)

Directions:
Sauté the Onions:
In a large skillet or pot, heat olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, for about 15-20 minutes until they are caramelized and golden brown. Add minced garlic and sauté for an additional minute until fragrant.
Brown the Beef:
In a separate large pot, brown the beef stew meat over medium-high heat until it’s browned on all sides, about 5-7 minutes. You may need to do this in batches to avoid overcrowding the pot.
Combine Ingredients:
Add the caramelized onions and garlic to the pot with the beef. Pour in the beef broth, Worcestershire sauce, thyme, salt, and pepper. Stir to combine.
Simmer:
Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer for about 1 to 1.5 hours or until the beef is tender. Stir occasionally.
Cook the Noodles:
In the last 15 minutes of cooking, add the egg noodles to the pot. Make sure they are submerged in the broth. Cover and continue cooking until the noodles are tender, about 10-12 minutes.
Add Cheese:
Once the noodles are cooked, sprinkle the shredded Swiss cheese on top. Cover the pot again for a few minutes to allow the cheese to melt.
Serve:
Garnish with fresh parsley before serving. Enjoy this comforting dish with crusty bread or a side salad.
