Freakin’ Fantastic Fried Rice

Ingredients:
3 cups cooked and cooled jasmine rice (preferably day-old)
2 tbsp vegetable oil
2 large eggs, lightly beaten
1 small onion, finely chopped
2 cloves garlic, minced
1 cup frozen peas and carrots, thawed
1/2 cup chopped green onions
1/4 cup soy sauce
2 tbsp oyster sauce (optional for extra flavor)
1 tbsp sesame oil
1/2 tsp ground white pepper
1/2 tsp sugar
Salt to taste
Optional: 1 cup cooked chicken, shrimp, or tofu for added protein

Directions:
Prepare the Rice:
Ensure the rice is cold and separated. This prevents clumping and helps achieve that perfect fried texture. If you’re using freshly cooked rice, spread it on a baking sheet and chill it in the refrigerator for 30 minutes.
Scramble the Eggs:
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium heat.
Add the beaten eggs and cook until just scrambled. Remove the eggs from the pan and set aside.
Sauté the Vegetables:
Add the remaining tablespoon of oil to the same skillet.
Add the chopped onion and sauté until it becomes translucent, about 2-3 minutes.
Add the minced garlic and cook for an additional minute until fragrant.
Stir-Fry the Rice:
Increase the heat to high and add the cold rice to the skillet. Stir-fry the rice by breaking up any clumps and ensuring it’s heated evenly.
Add Flavorings:
Pour the soy sauce, oyster sauce (if using), sesame oil, white pepper, and sugar over the rice. Stir to coat the rice evenly.
Mix in Vegetables and Eggs:
Add the thawed peas and carrots, scrambled eggs, and chopped green onions to the skillet. Stir everything together and cook for another 2-3 minutes until the vegetables are heated through.
Optional Protein:
If using cooked chicken, shrimp, or tofu, add it to the skillet and stir to combine. Cook until the protein is heated through.
Season and Serve:
Taste the fried rice and adjust the seasoning with salt if necessary.
Serve hot, garnished with additional green onions or a sprinkle of sesame seeds if desired.
Storage:
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or on the stovetop with a little oil.
