🍦 Fluffy Peanut Butter Frosting 🥜
Ingredients (Makes Enough to Frost 12 Cupcakes or One 9-inch Layer Cake)
½ cup (1 stick) unsalted butter, softened
1 cup creamy peanut butter
3–4 cups powdered sugar
2–3 tbsp milk or heavy cream
1 tsp pure vanilla extract
Pinch of salt (optional, to balance sweetness)
Instructions
Beat the Butter:
In a large mixing bowl, use an electric mixer to beat the softened butter until light and fluffy—about 1–2 minutes on medium speed.
Add Peanut Butter:
Mix in the creamy peanut butter until fully incorporated and smooth.
Gradually Add Sugar:
Slowly add powdered sugar, one cup at a time, alternating with tablespoons of milk or cream. Continue mixing on low speed until all sugar is blended in.
Boost the Flavor:
Stir in vanilla extract and a pinch of salt if using.
Whip Until Light:
Increase the mixer speed to high and whip for an additional 2–3 minutes until the frosting becomes light, fluffy, and spreadable.
Use Immediately or Store:
Use the frosting right away or store it in an airtight container in the refrigerator for up to 5 days. Let it come to room temperature and re-whip with a mixer before using again.
