Fluffy Pancakes
These fluffy pancakes are light, airy, and perfect for breakfast or brunch!
Ingredients:
250g all-purpose flour 🌾
2 large eggs 🥚
300ml water 💧
2 tablespoons sugar 🍬
2 tablespoons melted butter 🧈
1 sachet (about 10g) baking powder 🧁
1 pinch of salt 🧂
1 teaspoon vanilla extract (optional) 🍦
Instructions:
Mix Dry Ingredients:
In a large bowl, whisk together the flour, sugar, baking powder, and salt.
Mix Wet Ingredients:
In a separate bowl, beat the eggs, then add the water and vanilla extract (if using). Stir in the melted butter.
Combine Wet and Dry Ingredients:
Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix; it’s okay if the batter is a little lumpy.
Cook the Pancakes:
Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
Pour a small amount of batter onto the hot surface and cook for 2-3 minutes or until bubbles start to form on the surface of the pancake. Flip the pancake and cook for another 1-2 minutes, or until golden brown.
