☁️ Fluffy Cottage Cheese Cloud Bread
Light, airy, and melt-in-your-mouth delicious—this protein-packed twist on cloud bread is the perfect low-carb, gluten-free snack or sandwich base!
🧾 Ingredients:
3 large eggs, separated
¼ cup cottage cheese
¼ tsp cream of tartar
1 tsp honey (optional, for a touch of sweetness)
¼ tsp salt
👩🍳 Directions:
Preheat Oven:
Preheat your oven to 300°F (150°C).
Line a baking sheet with parchment paper or a silicone baking mat.
Prepare the Egg Whites:
In a clean mixing bowl, add the egg whites and cream of tartar.
Whip using a hand mixer or stand mixer on high until stiff peaks form (about 3–4 minutes).
Mix the Yolks:
In a separate bowl, combine egg yolks, cottage cheese, honey (if using), and salt.
Mix until smooth.
Fold Gently:
Carefully fold the egg white mixture into the yolk mixture using a spatula.
Do this in batches, being gentle to keep the batter fluffy.
Scoop & Shape:
Scoop 6–8 fluffy mounds onto the prepared baking sheet.
Gently spread each into a round “cloud” shape, about ½ inch thick.
Bake:
Bake for 25–30 minutes, or until golden brown and firm to the touch.
Cool & Serve:
Let cool for 5–10 minutes.
Enjoy warm or cool as sandwich buns, breakfast bases, or just on their own!
