Filipino Sticky Rice with Mango
Ingredients:
1 cup sticky rice (glutinous rice)
1 cup coconut milk
1/2 cup water
1/4 cup sugar
1/2 tsp salt
1 tbsp toasted sesame seeds (optional)
1/4 cup ripe mango, sliced (optional)
Directions:
Wash the sticky rice thoroughly under cold water.
In a pot, combine the rice, coconut milk, water, sugar, and salt. Stir to dissolve the sugar.
Bring to a simmer over medium heat. Cover and cook for about 20-25 minutes until rice is tender and the liquid is absorbed.
Remove from heat and let it cool slightly.
Mold the rice into small portions using your hands or a mold.
Serve topped with toasted sesame seeds and a slice of ripe mango, if desired.
