Filipino Pancit

Ingredients:
8 oz pancit bihon (rice noodles)
2 tablespoons vegetable oil
3 cloves garlic, minced
1 onion, thinly sliced
1 carrot, julienned
1/2 cup cabbage, shredded
1/2 cup green beans, sliced
1/2 pound chicken breast, sliced thin
1/2 pound shrimp, peeled and deveined
2 tablespoons soy sauce
1 tablespoon fish sauce (optional)
1 1/2 cups chicken broth
1 lemon, sliced for garnish
Green onions, chopped for garnish
Salt and pepper to taste

Directions:
Prepare the Noodles: Soak the pancit bihon noodles in warm water for about 10 minutes or until softened. Drain and set aside.
Cook the Chicken and Shrimp: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the sliced chicken breast and cook until browned and fully cooked. Add the shrimp and cook for another 2-3 minutes until pink and opaque. Remove from skillet and set aside.
Sauté the Vegetables: In the same skillet, add the remaining 1 tablespoon of oil. Sauté the garlic and onion until fragrant and soft, about 2-3 minutes. Add the carrots, cabbage, and green beans. Stir-fry until the vegetables are tender but still crisp, about 5 minutes.
Add the Broth and Seasoning: Pour in the chicken broth, soy sauce, and fish sauce (if using). Bring the mixture to a simmer.
Add Noodles: Stir in the soaked pancit noodles and cook until the noodles have absorbed the broth, about 5 minutes. Add the cooked chicken and shrimp back into the skillet, stirring to combine everything.
Season and Serve: Season with salt and pepper to taste. Serve hot, garnished with lemon slices and chopped green onions.
