Famous Red Lobster Shrimp Scampi
Ingredients:
1 lb large shrimp, peeled and deveined
4 tablespoons unsalted butter
3 tablespoons olive oil
4 cloves garlic, minced
1/4 cup dry white wine (or chicken broth)
1 tablespoon lemon juice
1/2 teaspoon lemon zest
1/4 teaspoon crushed red pepper flakes (adjust to taste)
1/4 cup chopped fresh parsley
Salt and pepper to taste
8 oz linguine or spaghetti (optional, for serving)
Freshly grated Parmesan cheese (for garnish, optional)
Directions:
Cook the Pasta (if using):
Bring a large pot of salted water to a boil.
Cook the linguine or spaghetti according to package instructions until al dente.
Drain and set aside.
Prepare the Shrimp:
Pat the shrimp dry with paper towels. Season lightly with salt and pepper.
Sauté the Shrimp:
In a large skillet, heat the olive oil and 2 tablespoons of butter over medium-high heat.
Add the shrimp and cook for 1-2 minutes on each side, or until pink and opaque. Remove the shrimp from the skillet and set aside.
Make the Scampi Sauce:
In the same skillet, add the remaining 2 tablespoons of butter.
Once melted, add the minced garlic and cook for about 1 minute, or until fragrant.
Pour in the white wine (or chicken broth), lemon juice, and lemon zest. Stir well to combine.
Bring to a simmer and cook for 2-3 minutes, allowing the sauce to reduce slightly.
Combine and Serve:
Return the shrimp to the skillet and toss to coat with the sauce.
Stir in the chopped parsley and crushed red pepper flakes.
If serving with pasta, toss the cooked linguine or spaghetti with the scampi sauce before adding the shrimp. Otherwise, serve the shrimp and sauce over the pasta.
Garnish with freshly grated Parmesan cheese, if desired.

Store leftovers in an airtight container in the refrigerator for up to 2 days.
