English Muffin Breakfast Pizza Recipe
Ingredients:
4 English muffins, split in half
1/2 cup pizza sauce
1 cup shredded mozzarella cheese
4 large eggs
1/2 cup cooked bacon or sausage, crumbled
1/2 cup chopped bell pepper (optional)
1/4 cup chopped green onions (optional)
Salt and pepper, to taste
Olive oil or cooking spray
Fresh basil or parsley, for garnish (optional)
Instructions:
Preheat the Oven:
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray or olive oil.
Prepare the English Muffins:
Place the English muffin halves on the prepared baking sheet, cut side up. Lightly toast them in the preheated oven for about 5 minutes.
Add the Sauce and Cheese:
Spread a spoonful of pizza sauce on each toasted English muffin half. Sprinkle shredded mozzarella cheese over the sauce.
Add Toppings:
Crack one egg into a small bowl, then gently slide it onto one of the English muffin halves. Repeat with the remaining eggs and English muffins. If using, sprinkle cooked bacon or sausage crumbles, chopped bell pepper, and green onions over the top. Season with salt and pepper to taste.
Bake:
Bake in the preheated oven for 12-15 minutes, or until the egg whites are set and the yolks are cooked to your liking. Keep an eye on the pizzas to ensure the cheese doesn’t burn.
Garnish and Serve:
Remove the breakfast pizzas from the oven and let them cool slightly. Garnish with fresh basil or parsley if desired.
Serve immediately and enjoy!
