English Muffin Breakfast Pizza
Ingredients:
4 English muffins (split in half)
8 large eggs
1 cup shredded cheddar cheese
4 slices of bacon (cooked and crumbled)
½ cup diced bell peppers (optional)
½ cup diced onions (optional)
½ cup baby spinach (optional)
2 tbsp butter
Salt and pepper to taste
Red pepper flakes (optional)
Directions:
Preheat the Oven:
Preheat your oven to 375°F (190°C). Place the split English muffin halves on a baking sheet and set aside.
Scramble the Eggs:
In a medium-sized skillet, melt butter over medium heat. Add eggs and scramble until fully cooked. Season with salt and pepper, then remove from heat.
Assemble the Pizzas:
Top each English muffin half with a spoonful of scrambled eggs, spreading it evenly. Sprinkle cheddar cheese over the eggs. Add crumbled bacon and optional toppings like diced bell peppers, onions, and spinach.
Bake:
Place the baking sheet in the preheated oven and bake for 8-10 minutes, or until the cheese is melted and bubbly.
Serve:
Remove from the oven and let the pizzas cool for a minute or two. Sprinkle with red pepper flakes if desired and serve warm.
