Egg Roll in a Bowl
Ingredients:
1 lb (450g) ground pork (or chicken, turkey, or beef)
1 tablespoon vegetable oil
1 medium onion, chopped
2 cloves garlic, minced
1 teaspoon fresh ginger, minced
4 cups shredded cabbage (coleslaw mix)
1 cup shredded carrots
1/4 cup soy sauce
2 tablespoons rice vinegar
1 tablespoon hoisin sauce
1 teaspoon sesame oil
1/2 teaspoon crushed red pepper flakes (optional)
2 green onions, sliced (for garnish)
Sesame seeds (for garnish)
Directions:
Cook the Meat: In a large skillet or wok, heat vegetable oil over medium-high heat. Add the ground pork and cook until browned and fully cooked, breaking it up with a spatula as it cooks. Remove excess fat if necessary.
Sauté Aromatics: Add chopped onion, minced garlic, and minced ginger to the skillet with the meat. Sauté for 2-3 minutes until the onion is translucent and fragrant.
Add Vegetables: Stir in the shredded cabbage and carrots. Cook for 5-7 minutes, stirring occasionally, until the vegetables are tender.
Add Sauces and Seasonings: Pour in soy sauce, rice vinegar, hoisin sauce, and sesame oil. Stir to combine all ingredients. Cook for an additional 2-3 minutes, allowing the flavors to meld together. Add crushed red pepper flakes if desired for extra heat.
Serve: Garnish with sliced green onions and sesame seeds. Serve hot, either on its own or over rice or noodles if desired.
