Ingredients

1 refrigerated pie crust

1 Tbsp olive oil

1 small onion, finely chopped

2 cups fresh spinach (or 1 cup frozen, thawed and drained)

4 large eggs

1 cup milk or half-and-half

1 cup shredded cheese (cheddar, Swiss, or mozzarella)

½ tsp salt

¼ tsp black pepper

¼ tsp nutmeg (optional)

Directions

Preheat Oven
Preheat oven to 375°F (190°C). Place the pie crust in a 9-inch pie pan and set aside. -
Cook the Vegetables
Heat olive oil in a skillet over medium heat. Sauté chopped onion until soft and translucent (about 3–4 minutes). Add spinach and cook until wilted. Remove from heat and let cool slightly. -
Prepare the Egg Mixture
In a bowl, whisk together eggs, milk, salt, black pepper, and nutmeg. -
Assemble the Quiche
Spread the cooked onions and spinach evenly in the pie crust. Sprinkle shredded cheese on top. Pour the egg mixture over the filling. -
Bake
Bake for 35–40 minutes, or until the center is set and the top is lightly golden. If the edges brown too quickly, cover with foil. -
Cool & Serve
Let quiche cool for 5–10 minutes before slicing. Serve warm or at room temperature.
