Easy Sausage Breakfast Muffins Recipe
Ingredients:
1 lb (450 g) ground breakfast sausage
6 large eggs
1/2 cup milk
1 cup shredded cheddar cheese
1/2 cup chopped bell pepper (any color)
1/4 cup chopped green onions
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp paprika

Instructions:
Preheat the Oven:
Preheat your oven to 375°F (190°C). Spray a 12-cup muffin tin with cooking spray.
Cook the Sausage:
In a large skillet, cook the ground breakfast sausage over medium heat until browned and cooked through. Drain any excess fat and set the sausage aside to cool slightly.
Prepare the Egg Mixture:
In a large mixing bowl, whisk together the eggs and milk until well combined. Add the shredded cheddar cheese, chopped bell pepper, chopped green onions, salt, black pepper, garlic powder, onion powder, and paprika. Stir to combine.
Assemble the Muffins:
Divide the cooked sausage evenly among the muffin cups. Pour the egg mixture over the sausage, filling each muffin cup about 3/4 full.
Bake:
Bake in the preheated oven for 20-25 minutes, or until the muffins are set and lightly golden on top. A toothpick inserted into the center of a muffin should come out clean.
Cool and Serve:
Allow the muffins to cool in the tin for a few minutes before removing them. Serve warm, or let them cool completely and store in an airtight container in the refrigerator for up to 5 days.
