Easy Sausage Breakfast Muffins
Ingredients:
1 lb ground sausage (pork, turkey, or chicken)
1½ cups shredded cheddar cheese
1 cup all-purpose flour
1 tsp baking powder
½ tsp garlic powder
½ tsp onion powder
¼ tsp salt
¼ tsp black pepper
3 large eggs
½ cup milk
¼ cup melted butter
½ cup diced bell peppers (optional)
½ cup chopped spinach (optional)
Directions:
Preheat the Oven:
Preheat your oven to 375°F (190°C). Grease a muffin tin or line it with paper muffin cups.
Cook the Sausage:
In a large skillet, cook the sausage over medium heat until browned and fully cooked, about 6-8 minutes. Drain any excess fat and set the sausage aside to cool slightly.
Mix the Dry Ingredients:
In a large mixing bowl, combine the flour, baking powder, garlic powder, onion powder, salt, and pepper.
Add Wet Ingredients:
In a separate bowl, whisk together the eggs, milk, and melted butter until well combined.
Combine Mixture:
Slowly add the wet ingredients to the dry mixture, stirring until just combined. Fold in the cooked sausage, shredded cheese, and optional bell peppers and spinach.
Fill the Muffin Tin:
Spoon the muffin batter into the prepared muffin tin, filling each cup about ¾ full.
Bake:
Bake in the preheated oven for 20-25 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
Cool and Serve:
Let the muffins cool for a few minutes before removing them from the tin. Serve warm.
