This comforting German-inspired casserole combines tangy sauerkraut, savory meat, and creamy sauce for a hearty one-dish meal that’s perfect for weeknights or potlucks.
Ingredients
1 lb ground beef or pork (or a mix)
1 medium onion, diced
1 can (14 oz) sauerkraut, drained and lightly rinsed (if less tang is desired)
1 can (10.5 oz) cream of mushroom soup
½ cup sour cream
½ tsp caraway seeds (optional but recommended)
Salt & pepper to taste
2 cups cooked egg noodles (about 4 oz dry)
1 cup shredded Swiss or mozzarella cheese
Chopped parsley for garnish
Optional Additions:
½ lb sliced kielbasa or smoked sausage
1 cup sliced mushrooms
1 tbsp Dijon mustard for extra tang
Buttered breadcrumbs or French fried onions for topping
Instructions
1️⃣ Prep: Preheat oven to 375°F (190°C). Grease a 9×13″ baking dish.
2️⃣ Cook Meat: In a skillet, brown ground meat and onion over medium heat. Drain fat.
3️⃣ Combine: Stir in sauerkraut, soup, sour cream, caraway seeds, salt & pepper. Fold in cooked noodles.
4️⃣ Bake: Transfer to baking dish. Top with cheese (and optional breadcrumbs).
5️⃣ Finish: Bake uncovered 20-25 mins until bubbly and golden. Garnish with parsley.
