Easy Divinity Candy Recipe
Ingredients
2 ½ cups granulated sugar
½ cup light corn syrup
½ cup water
2 large egg whites, room temperature
1 tsp pure vanilla extract
Optional: 1 cup chopped pecans or walnuts
Food coloring (optional)
Instructions
1. Prepare Your Workspace
Line a baking sheet with parchment paper or waxed paper. Lightly grease two spoons for scooping the candy.
Ensure all ingredients are measured and ready, as timing is critical.
2. Make the Syrup
Combine sugar, corn syrup, and water in a heavy-bottomed saucepan.
Heat over medium heat, stirring occasionally until the sugar dissolves.
Once it starts boiling, stop stirring and use a candy thermometer to monitor the temperature. Heat until the mixture reaches 250°F (hard ball stage).
3. Beat the Egg Whites
While the syrup is cooking, beat egg whites in a clean, dry bowl with an electric mixer on high speed until stiff peaks form.
4. Combine Syrup and Egg Whites
Once the syrup reaches 250°F, remove it from heat. Slowly pour the hot syrup in a thin stream into the beaten egg whites while continuing to beat at medium-high speed. Be careful not to pour too quickly to avoid scrambling the eggs.
Add vanilla extract (and food coloring if using) while continuing to beat.
5. Mix Until Fluffy
Beat the mixture until it becomes thick, loses its gloss, and holds its shape. This may take 4-6 minutes. Stir in nuts if desired.
6. Shape the Candy
Quickly drop spoonfuls of the mixture onto the prepared baking sheet before it hardens. Use the greased spoons to help shape each piece.
Let the candies cool completely.
