Easy Crockpot Lasagna

Ingredients:
1 lb ground beef or Italian sausage
1 small onion, chopped
2 cloves garlic, minced
1 jar (26 oz) marinara sauce
1 can (15 oz) ricotta cheese
1 egg
2 cups shredded mozzarella cheese
1 cup grated Parmesan cheese
9-12 lasagna noodles (no-boil or regular, broken into pieces if needed)
1 teaspoon dried Italian seasoning
Salt and pepper to taste
Fresh basil or parsley for garnish (optional)

Directions:
Cook the Meat:
In a large skillet over medium heat, brown the ground beef or Italian sausage, along with the chopped onion and minced garlic. Cook until the meat is no longer pink and the onions are soft. Drain any excess fat.
Add Marinara Sauce:
Stir in the marinara sauce with the cooked meat and let it simmer for a few minutes. Set aside.
Prepare the Cheese Mixture:
In a bowl, mix the ricotta cheese, egg, Italian seasoning, salt, and pepper until well combined. This will be your cheese filling.
Layer the Ingredients in the Crockpot:
Start by spreading a thin layer of the meat sauce mixture on the bottom of the crockpot.
Place a layer of lasagna noodles on top (3-4 noodles).
Spread half of the ricotta cheese mixture over the noodles.
Sprinkle a layer of mozzarella cheese and some Parmesan cheese on top.
Repeat the layers: meat sauce, noodles, remaining ricotta mixture, and cheese.
Finish with a final layer of noodles, the remaining meat sauce, and top with the rest of the mozzarella and Parmesan cheese.
Cook:
Cover the crockpot and cook on low for 4-6 hours or on high for 2-3 hours. The cheese should be melted, and the noodles should be tender.
Serve:
Once cooked, let the lasagna sit for about 10-15 minutes before slicing. Garnish with fresh basil or parsley if desired. Serve hot and enjoy your delicious, easy crockpot lasagna!
