Easy Chicken Tostadas

Ingredients:
2 cups cooked chicken, shredded (rotisserie chicken works great)
1 can (15 oz) refried beans (or black beans, mashed)
8 small tostada shells (store-bought or homemade)
1 cup shredded lettuce
1 cup diced tomatoes
1/2 cup red onion, finely chopped
1/2 cup shredded cheddar cheese (or Mexican blend)
1/4 cup sour cream (optional, for topping)
1/4 cup salsa or pico de gallo
1 tbsp fresh cilantro, chopped (optional)
Lime wedges (for serving)
Salt and pepper, to taste

Instructions:
Prepare the Chicken:
If using rotisserie chicken, shred it into small pieces. You can also cook and shred chicken breasts if preferred. Season the chicken with a pinch of salt and pepper.
Warm the Beans:
In a small saucepan, heat the refried beans over medium heat until warmed through, stirring occasionally. If using black beans, mash them with a fork or potato masher and heat them up.
Assemble the Tostadas:
Place the tostada shells on a baking sheet or serving platter. Spread a thin layer of warm refried beans or mashed black beans on each shell.
Top with Chicken:
Spoon the shredded chicken on top of the beans, spreading it evenly.
Add Toppings:
Layer the shredded lettuce, diced tomatoes, red onion, and cheese on top of the chicken.
Serve:
Top with a dollop of sour cream, a spoonful of salsa or pico de gallo, and a sprinkle of fresh cilantro. Serve with lime wedges on the side for squeezing over the tostadas.
