🥣 Easy Chicken Taco Soup
Serves: 6 | Prep Time: 10 min | Cook Time: 25 min
🧄 Ingredients:
1 tbsp olive oil
1 small onion, chopped
2 cloves garlic, minced
1 lb cooked chicken (shredded or diced; rotisserie works great)
1 (15 oz) can black beans, drained and rinsed
1 (15 oz) can corn, drained
1 (15 oz) can diced tomatoes (with juices)
1 (10 oz) can diced tomatoes with green chilies (like Rotel)
1 packet taco seasoning (or homemade—see below)
3 cups chicken broth
Salt and pepper, to taste
🧂 Optional Toppings:
Shredded cheese
Sour cream
Tortilla chips or strips
Avocado slices
Fresh cilantro
Lime wedges
🍲 Instructions:
Sauté the aromatics:
In a large pot, heat olive oil over medium heat. Add onion and cook for 3–4 minutes until softened. Add garlic and cook for 1 minute more.
Combine ingredients:
Add chicken, black beans, corn, diced tomatoes, Rotel, taco seasoning, and chicken broth. Stir well to combine.
Simmer:
Bring the soup to a gentle boil, then reduce heat and simmer uncovered for 15–20 minutes to blend flavors.
Taste and adjust:
Season with additional salt and pepper as needed.
Serve:
Ladle into bowls and top with your favorite toppings. Serve with tortilla chips or cornbread on the side.
🌶️ Optional Homemade Taco Seasoning:
1 tbsp chili powder
1 tsp cumin
1 tsp paprika
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp oregano
1/4 tsp cayenne (optional)
Salt and pepper to taste
